Family Cooking on a time and money budget!

I am not a good cook. Friends would say that I can destroy a pizza. There was one incident at my 30th birthday celebrations where I dished up a char-coaled offering. It is not my strength.


However, now there is a family to sustain. Since lock down we have been so sick of the same meals and started to get creative in the kitchen (I say we, but my husband is far better in the kitchen than I am). Planning our meals and shopping in line with the week we had ahead. We don't do it every week, but to save you all the time of having to scroll through numerous cookery books we will be asking for recipes from busy parents all around the UK to find some new inspiration and motivation!

So, here we go with our first Culinary inspiration - Easy Fish Pie (Serves 4 to 6)


What do you need?


Frozen fish selection 400g (or you can use a mix of fresh fish

Onion - half

Garlic - 1 clove

Creme fraiche 1 pot 300ml

Carrot's - a few

a form of green veg - could be frozen peas

Potatoes - a few

Salt & Pepper

Tarragon OR Wholegrain mustard

Lemon & Prawns - Optional


Step 1: Defrost the fish (if applicable)

Step 2: Peel and boil the carrots and potatoes for 10 minutes

Step 3: Chop onions and garlic

Step 4: Pop fish, onions and garlic into the oven in a baking dish for 15 minutes at 180oC

Step 5: Bring out of the oven and drain any juice away

Step 6: Mix all creme fraiche with a little butter and either Tarragon OR Wholegrain mustard and add lemon juice. Add mixture to the fish and season with salt and pepper and add carrots and green veg

Step 7: Place potatoes on top- mashed or sliced, or however you like them really

Step 8: Place back in the oven for 25 minutes. Check and serve


You can serve it with bread and butter or garlic bread, ciabatta or homemade sweet potato fries (which is how we like it). Also very easy! Chop the sweet potatoes into wedges, drizzle oil on and season, put in the oven at the same time as the pie and let them roast.


Estimated cost is £3.20 per head which includes optional's and garlic bread.


Any left over? Freeze it and keep for another day!
